easy winter recipe

My favorite thing to make this time of year is roasted winter vegetables and it's so easy!  Any variety will do:
-potatoes
-sweet potatoes
-carrots
-fennel
-onions
-parsnips
-butternut squash

Preheat the oven to 400 degrees, pick your favorites from the list above, chop them up and throw them in a bowl, cover with olive oil, add salt, pepper and parsley to taste, mix them up and spread them out on however many cookie sheets it takes and bake each one for 40 minutes (turning them over after 20).

Voila!  An instant crowd pleaser and they reheat great, too!

on the road: riviera maya, mexico

This past weekend, I was quite the jet setter as I headed to Riviera Maya, Mexico for my dear friends Alexis & Dave's wedding.  We stayed at Ceiba Del Mar resort, just 20 minutes from the Cancun airport and I felt like I was in a Corona commercial all weekend.  And there is something so special about destination weddings where you can bond with people all weekend.  Check out some of my favorite shots (including the gorgeous bride!) from the weekend.

terrarium love

I love terrariums and succulents (the succulent in my house is one of the few plants that have lasted over a month).  And terrariums are cool, full of wonder and a great gift for the holidays when you're covered in snow and need a little more greenery in your life.  Bonus, easy to keep alive for the H2O challenged like myself.  Here are some of my favorites on Etsy.

hiker in heels?

Friends - you know I don't actually hike in heels, right?  It's just a way of expressing how I am just as comfortable in heels and a ballgown at a black tie gala as I am in hiking boots and a 40lb pack hiking Mount Katahdin and the struggle between both lives.

Well, no one told Teva.  They made Teva heels.

Ridiculous.  Save those Tevas for the footwear you put on at the campsite after a long day of hiking.  And I don't mean the high heeled kind.
